Zucchini Crumble

Ingredients

1 kg of zucchinis
goat's cheese 250g -
½ bouquet of mint -
2 teaspoon of fine semolina -
salt, pepper

Crumbles:

150g of whole-wheat flour
butter 75g
salt -
2 teaspoon of olive oil

Method

wash zucchinis with cold water,
top and tail them
grate them finely
press them between your hands to extract water and mix them with semolina

chop finely mint leaves and to dice the goat cheese s mix coarsely with zucchinis and to spread out the preparation in a dish.

preheat the oven thermostat 6 (180°).

To make the crumbs:

mix the flour, salt and butter then finish with the olive oil to obtain a kind of coarse semolina (add some more oil so that the paste have a less dry aspect).

Sprinkle these crumbs on zucchinis and cook for 20 to 25 min.
