Puerto Rican Cabbage Salad

Serves: 8 x 3/4 cup servings

Ingredients

7 cups very thinly sliced green cabbage (fresh, not bagged)
1/2 cup grated carrot (1 large)
2 tbsp finely chopped red onion
1 tbsp minced fresh cilantro
1/4 cup frehs lime juice (~3 limes)
1 tbsp cider vinegar
1 1/2 tsp extra virgin olive oil
1/4 tsp salt
1/4 tsp ground black pepper

Method

Combine first 4 ingredients in a large bowl. Combine juice and remaining ingredients, stirring well with a whisk. Drizzle juice mixture over cabbage mixture, toss well to combine. Cover and chill for 15 minutes.
