Peel the cucumber and slice it thinly with a cheese slicer. Put it in a bowl and sprinkle over the salt, mix. Put on a plate to press it down.
Remove the seeds from the chili and chop it finely. Chop the garlic finely.
Mix spirit vinegar, water, sugar, chili and garlic - stir until the sugar has dissolved.
Pour the dressing over the cucumber. Put it in the fridge for at least 1 hour. Mix in the coriander before serving.
