Linda's Old Fashioned Bread Stuffing

This classic bread stuffing (or dressing) is my closest version to my late Granny's Thanksgiving Stuffing that nobody knows the recipe to.

Ingredients

2 fat loaves of french bread (16 cups cubed?)
1 cup butter
2 medium onions, chopped (2 cups)
4 stalks celery, chopped (1 cup)
2 cloves garlic, pressed
4 tsp poultry seasoning
pepper (20 turns)
salt (40 turns)
2 Tbsp fresh sage leaves, chopped
2 tsp fresh thyme leaves, chopped
2 eggs

Method

- Tear up bread into bite-sized pieces, dry overnight in large bowl (you can use prepared bread cubes to save time)
- Note: you can pre-chop veggies the day before and put them in a baggie in the fridge.
- In a skillet or frying pan saute butter, onions, celery, garlic
- When onions are translucent add mixture to bread crumbs, stir
- Add spices (poultry seasoning, pepper, salt, sage, thyme), stir well (taste here and adjust if necessary)
- Add 1 1/2 cups hot/boiling water and eggs
- Put into roasting pan, cover with tin foil
- Oven for 60 minutes at 400F (last 20 minutes take off tin foil for crispy top)
