Cheese Grits from Jessica Robbins

Not healthy, but *very* tasty comfort food and a serious crowd-pleaser!

Ingredients

1 C quick-cooking grits
4 C water
1/3 lb cheddar cheese
2 lightly-beaten eggs
1 stick of butter
paprika
garlic powder

Method

Preheat oven to 350F. Cook grits according to directions on box in a large saucepan. Add cheese and butter. Stir until melted. Add 1 t paprika and garlic powder to taste. Stir until blended. Add eggs and mix, but not so much that eggs are totally absorbed. Bake in oven for 20-30 minutes, or until crusty and solid on top.
