LEMON ALMOND STRIPS

A lemon-lover's delight, You can't go wrong with a supply in your freezer.

Cooking time:

Ingredients

ALMOND CRUST
1 3/4 c. flour
1/3 c. granulated sugar
1/2 c. ground almonds
1 c. margarine
LEMON FILLING
4 eggs
2 c. granulated sugar
1/3 c. lemon juice
1/4 c. flour
1 tsp baking powder

FOR THE NUT ALLERGY USE THIS CRUST
1 1/2 c. flour
2tbsp sugar
1/2 c. margarine
mix flour,sugar cut in the margarine until ctumbly, and press into 9' pan bake at 350 F for 10 minute
oor until golden , cool

Method

CRUST
combine flour, and ground almond in mixiing bowl.
cut in margarine until mixture is crumbly.
Press into greased 13"x9" cake pan.
Bake at 350F for 10 minutes or until light golden .
cool 10 minutes.
FILLING
beat eggs, sugar and lemon juice together well
Combine flour and bakinf powder; stir into egg mixture thoroughly.
Pour over baked crust
Bake at 350F for 18 to 23 minutes, or just until set and light golden.
Coll, then cut into bars. Sprinkle with icing sugar before serving, if desired

Bar are a popular items as they're many cookies bake in a pan, they are easy to prepare and also easy to store and transport.
