Ingredients

1 9" DEEP DISH QUICHE SHELL OR 2 9" PIE SHELL,
LIGHTLY BAKED
1 MEDIUM ONION THINLY SLICE
1 C. SLICE MUSHROOMS
1/4 C. CHOPPED GREEN PEPPER
2 TBSP BUTTER
1 C. MILK
1/2 C. HEAVY CREAM
3 EGGS, LIGHTLY BEATEN
1/2 TSP ITALIEN HERB OR OREGANO
1 TSP SALT
1/8 PEPPER
1 1/2 TBSP TOMATO PASTE OR SAUCE
1 C. GRATED MOZARELLA CHEESE
1/2 C. THINLY SLICE PEPPERONI ( OPT.)

Method

SAUTE ONION, MUSHROOM AND GREEN PEPPER
IN BUTTER; SET ASIDE
COMBINE MILK, CREAM, EGGS AND SEASONING;
ADD SAUTEED VEGETABLES.
SPREAD TOMATO PASTE OR SAUCE OVER BOTTOM OF PASTRY SHELL; SPRINKLE WITH CHEESE, AND THAN COVER WITH MILK- VEGETABLE MIXTURE.
ARRANGE PEPPERONI IF USED ON TOP.
BAKE AT 425F FOR 20 TO 30 MINUTES, OR UNTIL SET.
IF CRUST BEGINS TO BROWN TOO QUICKLY, COVER WITH A FOIL COLLAR
