Ingredients

12 cups coarsely chopped tomatoes
2 cups chopped green pepper
1/2 jalepeno peppers - optional
2 cups chopped onion
7 cloves garlic
2 teaspoons salt
1/3 cup apple cider vinegar
1/4 cup brown sugar
oregano, basil, cayenne - to your taste

Method

Toss all the chopped veggies, spices, vinegar, sugar etc. into a large pot, simmer on med-low until the liquid has boiled down to a desirable amount. Taste, add more hotness if it's not hot enough. Use immediately or jar using your preferred canning method for a later use. Make 4 pint size jars - about 8 cups.
