Scallop salad with sesame and garlic dressing

Hearty fresh scallops served simply!

Ingredients

250g scallops
25g wild rocket
30g baby leaf
small white/red onion, thinly sliced
12 pomidoro tomatoes, halved
juice of a whole lime
2 cloves of garlic (crushed)
salt and pepper to taste

FOR THE DRESSING:
1 tablespoon sesame oil
1 teaspoon balsamic vinegar
juice of 1/2 an orange
juice of 1/2 a lime
3 cloves garlic (crushed)
salt and pepper to taste

Method

1. first prepare your scallops for seasoning (I usually buy them already prepared with no extra trimming needed).
2. mix your crushed garlic, salt and pepper with the juice from the lime in a bowl over the scallops. make sure it mixes well. cover with cling film and put in the fridge so that it absorbs those flavours while you prepare the salad dressing.
3. mix well the sesame oil with the balsamic vinegar, then add the fruit juices (orange + lime) and finally the garlic and salt and pepper. again, mix very well.
4. prepare your simple salad. hand toss some wild rocket with baby leaf, then hand toss in some thinly sliced onion (not everyone likes onion in their salad, you can also briefly steam them or fry if you like them softer and to give a bit of caramel colour), lastly drop in your pomidoro tomato halves. (at this point, i like a bit of freshly ground black pepper over it). toss well to ensure it's mixed properly.
5. take your marinated scallops from the fridge. heat a girdle pan over medium heat(or barbecue), make sure the girdle pan has an even spray of sunflower or vegetable oil (i use something like fry light). place each scallop on the girdle pan. watch it and turn over every 3 mins. You will need to turn each side twice, until cooked. They should be quite springy.
6. Prepare your salad on flat plates, divided equally. Place the scallops on top. Using a teaspoon, lightly sprinkle dressing over the salad and warm scallops.
Sit and enjoy with a drink of your choice. If you are a wine drinker, it has been said a crisp white wine is the perfect accompaniement.
