Nanna's Own Potato Salad

The best damn potato salad you'll EVER eat

Ingredients

5 lbs. Potatoes
Mayonnaise (to taste)
6 Eggs
1 Medium Onion
3 Stalks Celery
1/2 Jar Roasted Garlic Relish (drained) (Stop & Shop carries this)
Paprika
Parsley
Sal & Pepper to taste

Method

Boil Potatoes & Eggs until done (together -- will save you time). While potatoes & eggs are boiling, chop up the onion and celery. Drain the relish. After the potatoes & eggs are finished boiling and DONE, drain off the hot water and rinse with cold water until cold to the touch. Shell the eggs and chop up. Dice the potatoes into cubes with the SKINS ON (all the nutrients are in the skin). Mix all of the ingredients in a large bowl. Do not use too much mayonnaise -- will make the potato salad wet the next day (if you have any left). Top with Paprika and Parsley. Chill, serve, enjoy!!!
