Chicken mignons

Ingredients

breast of chicken
1 bacon rasher
crushed garlic
mixed herbs of choice ( oregano or basil)
butter
one skewer

Method

cut the chicken in half horizontally
place a strip of bacon over it
mix the butter herbs and garlic and put in the middle on the bacon
roll the chicken up and skewer in order to have all ingredients rolled up inside
sprinkle with chicken seasoning (optional)
or wrap in the chicken skin with bit of butter for moisture
put in the oven until cooked, my oven takes about 40 mins fan forced electric
Remember the bacon will color the chicken pink but it is cooked
**If it's for a vegetarian use eggplant instead of chicken and stuff with ricotta
