Butterscotch Rice

Rice pudding - my mum's recipe

Ingredients

1/3 cup rice
2 cup milk
1 cup brown sugar
2 tablespoons (2oz) butter

Method

Cook rice with milk in a double saucepan til just tender (or just a normal one will do, if you're careful not to let it boil over).

In another pan, melt the butter and stir in the brown sugar. Cook til it caramels (don't let it burn).
Add to the rice and cook til soft and well combined.

Can be eaten hot or cold.
