Florentine Minestrone

This is a recipe I made up after having the best ever in Florence. It's based on it, but not quite right, but rather tasty.

Ingredients

2 cans cannellini beans
Olive Oil
Garlic
Onion
Mushrooms
1 big can tomatoes
Olive Oil
Garlic
1 big can veggie broth (about 1 1/2 - 2 cups)
1/2 pound pasta
basil
oregano
parsley
salt
pepper
crushed red pepper

Method

1)Cook the pasta most of the way. Stop when it still have a bit of a bite to it
2) Sautee Garlin, Onion, and Mushrooms in the olive oil
2) In a blender blend together the can of tomatoes, broth, spices, one can of the beans, and sauteed veggies
3) Put everything into a big pot along with the rest of the beans and mix and simmer for about 30 minutes.
Stir often so it doesn't burn!
