1 cup long grain white rice
1/4 yellow or white onion (cut up into thick slices)
1/4 green pepper (cut up into slices)
Handful of cilantro
1/4 cup olive oil
2 tsp. of "Consomate" (Knorr-brand vegetable bouillon powder)
1 clove garlic, minced
1/4 tsp. freshly ground pepper
1/4 tsp. ground cumin
2 cups water
Heat oil over medium heat, then add uncooked rice and stir until it turns a little bit white. Then, add the onion and keep stirring until it turns a little darker (don't let it turn too brown). At this point, add garlic, cumin, pepper, and consomate to 3/4 cup water, and pour on rice. Cover for about 30 seconds, then add the remaining 1 1/4 cups water and stir.
When the water begins to boil, add the green pepper slices and cilantro. Then, lower heat to medium-low and simmer for 15 minutes.
