Honey Harvest Bran Muffins

Ingredients

2 eggs
1/2 c. honey
1/2 c. milk
1/4 c. vegetable oil
1 tsp vanilla
1 1/2 c 100% bran cereal
1 c. lightly packed carrots, zuccini or peeled apple
1 1/2 c. flour
1 tbsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt

Method

Beat eggs, honey milk oil and vanilla together.
Stir in bran and vegetable or fruit.stir until bran is slightly softened and blended
Combine remaining ingredients in large bowl,
Add in liquid mixture , stir just until moistened.
Spoon batter into greased muffin cups, fill to top
Bake at 400F for 18 to 20 min or until done
Cool.
Store in airtight container

Helpful Hint : If you have 2 or more things to grate for a recipe , grate the softest one first, then the firmer foods clean the opening in the grater
