Lentil and Brown Rice Casserole

This is a delicious and hearty meal.

3 cups broth (I use vegetable broth, but non-vegs could use chicken broth)
3/4 cup lentils
1/2 cup brown rice
3/4 cup chopped onions
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1 cup grated cheese (I use cheddar)


1. Preheat the oven to 300 degrees.
2. Mix all ingredients except the cheese in a baking dish (I use an 11 x 7).
3. Cover with foil and bake for 1 hour 10 minutes.
4. Then remove the foil, add the cheese, and bake for an additional 20 minutes.
