Very Ripe Banana Muffins

The perfect solution to old and squishy brown bananas, these muffins are yummy and moist - don't expect them to linger long.

Ingredients

1 c. bananas, mashed
1/3 c. melted shortening or oil (I use oil)
1/2 c. white sugar
1 egg, well beaten
1 tsp. vanilla
1 1/2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. chopped walnuts (optional)

Method

Mash bananas, add shortening or oil, sugar and salt, beat until blended. Add egg and vanilla and beat again. Sift flour, baking powder and baking soda into banana mixture. Add nuts if you're using them.

Drop spoonfuls into greased muffin tins and bake for 15-20 mins. at 300°F (150°C). Allow to cool.
