Apple Zucchini Bread

This is my favorite Zucchini bread recipe, and I have tried several different ones in an attempt to find a favorite.

Ingredients

4 cups all-purpose flour
1 TBSP baking soda
1/4 tsp baking powder
1 & 1/2 tsp salt
1 & 1/2 tsp cinnamon
1/4 tsp nutmeg
5 eggs
2 cups sugar
1 cup packed brown sugar
1 & 1/2 cup vegetable or canola oil
1 TBSP vanilla extract
2 cups shredded zucchini
1 cup shredded apples
1 & 1/2 cup chopped nuts, optional


Method

Combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set mixed dry ingredients aside.

Combine the eggs, oil, sugars, and vanilla in a large bowl. Beat well until well blended. Now stir in the zucchini, apples, and nuts. Add the wet ingredients to the dry ingredients; stir all just until moistened.

Put into greased and floured loaf pans about 3/4 of the way full. Do not overfill or batter will spill over the pans while in the oven. Bake at 350 degrees for 50 - 55 minutes.

Recipe makes 2 to 3 normal sized loaves or several mini loaves. I prefer baking them in mini loaves for about 30 to 35 minutes or until toothpick entered into the center of the loaf comes out dry.
