This cheesecake is a lot lighter than regular cheesecake, and since it's plain, you can put on whatever topping you want. Our favorite is cherry pie filling.

1 prepared graham cracker crust
1 (8 ounce) pkg cream cheese
1/2 cup sugar
2 tbsp flour
1 egg
2/3 cup evaporated milk
1/4 cup lemon juice


preheat oven to 350 degrees (180 Celcius)
beat cream cheese until light
beat in sugar, flour, and egg until smooth
gradually add milk and mix
add lemon juice
pour mixture into crust
bake 45 minutes
