Chocolate Peppermint Squares

A Mason favourite for parties.

Cooking time:

Ingredients

BASE
4 oz butter
1 1/2 tblspns cocoa
1/2 cup castor sugar
1 egg
vanilla
1 cup coconut
1/2 cup finely chopped walnuts
2 cup crushed wheatmeal biscuits (about one packet)

FILLING
1 oz copha
3 dessertspoons of milk
6 oz icing sugar
1/2 tspn peppermint essence

TOPPING
1 oz butter
6 oz dark chocolate

Method

BASE
Melt butter, cocoa & sugar in double boiler until dissolved.
Add egg, vanilla, coconut, walnuts & biscuits.
Press into 13x10 tin.
Refridgerate.

FILLING
Melt copha, milk & peppermint essence.
Add icing sugar.
Spread over base.
Refridgerate.

TOPPING
Melt butter and chocolate.
Spread over base & filling.
Refridgerate.
