Preheat oven to 350°F or 150°C.
Grease ad flour two loaf pans.
Grate rind and squeeze orange juice. Add the rest of the juice and butter. Heat until butter is melted.
In a bowl, beat eggs with sugar. Add the juice mixture and the dry ingredients; stir until blended.
Pour into pans and bake for about an hour. Check with a toothpick or a knife to see the cake is done.
Cool on a wire rack for 10 min. Carefully remove from pan and let cool completely. Could decorate with white powdered sugar and orange juice glaze and a couple of split cranberries.
Use one loaf and freeze the other.
