Finger Biscuits - Similar to Boidour

Favourite Italian recipe - one of those hidden treasured ones.

Difficulty: Medium - some experience needed

Ingredients

8 Eggs
2 Cups Sugar
1 cup oil
1 lemon rind grated or
2 tsp vanilla essence
salt
3 1/2 cups self raising flour

Method

Beat eggs and sugar
Add all other ingredients in above order
Bake at 175 degrees C for approx 20 minutes

Remember to line the baking trays/sheets with wax
paper - wax, side up - spray tin with spray and cook.

Should do 2 tins of an oven roasting dish.
It will be a thin layer of cake in each tray.
Once removed cut into strips about finger length.

When cold dry out in low temp oven overnight.
These are really lovely.

NB
for cake flour use 1 1/2 tsp baking powder
for every cup of flour.
