2 cans of coconut milk (Goya brand for sweetest flavor)
4 small pieces of Ginger root (1" pieces)
3 stalks of Lemon grass
1/4 tsp red curry paste
1 tsp brown sugar
2 tbs peanut oil
Shitake mushrooms, baby corn, water chesnuts, snow pees etc.
In a large pan, simmer coconut milk and peanut oil, ginger root (peal and bruise) lemon grass (sliced), curry paste, and brown sugar.
While everything is simmering, cut up the vegetables you want to add.
Take out the ginger (it is very strong to take a bite from!) and add vegetables. Add mushrooms first because those need to cook the longest. Simmer for 5 minutes.
