Mixed Dal

Ingredients

1/4 cup chana dal
1/4 cup toor dal
1/2 cup split urad dal
4 cups water
1 tsp turmeric
1 tbsp oil
1/4 tsp asafoetida
1 tbsp garlic, chopped
2 tsp salt (or to taste)
2 tbsp fresh grated ginger (optional)
1/3 pack of frozen or fresh chopped spinach, rinsed (optional)

Method

Wash dals well and drain. Put into a pressure cooker with 4 cups water and turmeric. You can also add ginger now or you can add it later (the taste is different). Put the lid on the pressure cooker. Cook on high until the whistle blows or reaches highest noise level (depends on type of pressure cooker). Turn heat down to medium-low and cook for 8-10 mins. In a separate pot, heat oil. Add asafoetida and fry for a few seconds. Add garlic and fry until light brown. Add ginger now if you didn't earlier, or just leave it out. Add spinach to the garlic if using. Once dal is done, pour into the pot with the garlic. Stir well and add salt. Continue cooking for 5 minutes. Add water if the dal is too thick, or continue cooking if too watery. Serve with basmati rice and your favorite Indian pickle.
