Preheat oven to 450 F. Peel and cube sweet potatoes. Cut up garlic, as much as you wish, into small pieces. Toss them together in a baking pan. Drizzle with olive oil to coat completely. Sprinkle thyme on top- add some fresh for a real kick. Grind on some sea salt and pepper. Mix thoroughly. Cover with foil, or leave open if you prefer them crispy. Cook for 30 min, then remove foil and return to oven for 5-10 minutes, to crisp top, if desired.
There is so much variability in this recipe- you can feed yourself or a dozen, make them soft or crispy, heavy on the seasoning or light.
