450 g boneless chicken
1 Tbsp Patak's Vindaloo curry paste
1 can Money's sliced mushrooms
1 onion
3 Tbsp ground ginger
3 Tbsp Splenda
1/4 cup vinegar
Chop the chicken into bite-sized pieces. Chop the onion into medium pieces. Toss all ingredients into a frying pan and simmer for 20 minutes, stirring occasionally.
