Serves: 6-8 servings
4 cups freshly brewed strong coffee
1 cup granulated sugar
zest of 1 lemon
1 tsp vanilla
2 whole star anise
1. In a bowl, stir together coffee, sugar, lemon zest, vanilla and star anise until sugar is dissolved. Let cool to room temperature.
2. Discard star anise. Pour into baking pan. Freeze for about 1 hour or until ice forms at the edges of the pan.
3. Using a fork, break up ice and stir to distribute frozen portions evenly. Freeze for 30 minutes or until solid.
4. Using a fork, stir to break up ice crystals. Continue freezing, stirring the mixture every 20 minutes, until slushy. Serve with whipped cream.
