Serves: 4-6 servings
2 cups unsweetened cranberry juice
1/2 cup dried cranberries
1 cup Simple Syrup
1/4 cup orange juice
1 tbsp. freshly squeezed lemon juice
1. In a bowl, stir cranberry juice with dried cranberries. Let stand for 1 hour or until cranberries are plump.
2. Stir in syrup, orange juice and lemon juice. Cover and refrigerate until completely cold or overnight.
3. Stir cranberry mixture. Transfer to an ice cream maker and freeze according to manufacturer's instructions.
