Tofu Satay Pie Surprise

Ingredients

BASE
1/2 cup stoneground wholemeal flour
1/4 cup white flour
1/2 cup rolled oats
1/4 cup sunflower seeds
1/4 cup sesame seeds
1/3 cup water (approx)

SAUCE
1/2 cup organic peanut butter (from Piko)
1/4 tsp salt
2 tsp brown sugar
3 tsp lemon juice
1 tsp fresh grated ginger
1 tsp soy sauce or tamari
1 cup water
1/2 – 1 tsp chilli sauce (I used Kaitaia Fire)

FILLING
3/4 cup grated cheese
2 med onions sliced
1 block of firm tofu diced
1 tbsp soy sauce or tamari
2 cloves sliced garlic
1 bunch asparagus
3 med firm ripe tomatoes

TOPPING
1 egg
1 small container sour cream (150gm)
herb salt + pepper to season
1/4 cup pumpkin seeds

Method

Sprinkle tofu with the first measutre of soy/tamari and leave to soak in while you make the base.

BASE
Mix all ingredient together and press into an oiled pie dish. Pre-bake for about 10 mins at 190c.

SAUCE
Put all ingredients in a small saucepan over med. heat. Bring to the boil and gently simmer about 5 minutes until thickened.

FILLING
Sprinkle grated cheese onto base. Saute onions in oil for 10 minutes. Add garlic and tofu and cook another 5 minutes. Spread this on top of the cheese. Arrange asparagus and sliced tomatoes on top of this. Pour over sauce.

TOPPING
Mix together sour cream and egg, season, spread on top of the pie and sprinkle with the pumpkin seeds.

Bake at 190c for 35-40 mins.
Serve hot and enjoy!
