Grandma's Stollen

Serves: 12


500grams flour (apprx 2 3/4 cups)
1pkg baking powder (apprx 16grams or 1 3/4 Tbsp)
200grams sugar
1 pkg vanilla sugar
pinch salt
4 drops each, Oetker Almond & Lemon essences
1 bottle Oetker rum flavouring (or 1 Tbsp rum)

2 eggs
125 grams butter
50 grams lard (or use butter again)
250grams Cottage cheese or Quark
125 - 250 grams each, Sultanas &
Almonds or Hazelnuts
125 grams currants
50 - 100grams lemon peel, diced


Sift Flour and powder onto a board. make a well in the middle & add sugar, spices, flavouring & egg. Add butter and cottage cheese, currants, peel, etc. Work into a paste. Knead. Make oval loaves and fold in half lengthwise. Bake on a baking sheet on greaseproof paper. Bake at Moderately hot heat for 50 - 60mins. Brush with butter and dust with sugar while still warm. Let cool before serving.

Option: you can place a small stick of Marzipan in the center of the loaf before folding it over.
