Fresh Tomato Chive Dressing

Serves: makes 2 cups

2 med tomamtoes, diced
2 tbsp cider vinegar
2 tbsp veg. oil
2 tsp dijon mustard
1 clove garlic, minced
3 tbsp chopped chives or green onion
freshly ground pepper to taste
1/4 cup crumbled feta cheese


In a small bowl, combine tomatoes, vinegar, oil, mustard, garlic, chives and pepper to taste; mix well. Cover and let refridgerate for up to 3 days. Just before serving, stir in cheese.

Great on a bed of mixed greens!!!!!
