1 Onion, 2 cloves of garlic, butter, tomatoes (can even use tin chopped tomatoes if nothing else), 1 potato, basil (fresh is best), chicken stock, Balsamic vinegar (optional but well worth it)
Melt the butter in a large pan, fry the chopped onion and garlic until soft. Add the basil and let it fry for a while.
Add the peeled and chopped potato and the chopped tomatoes. Stir in well, let it fry for a good amount of time until the flavours have been released or until the potatoes have softened slightly.
Add the chicken stock and let simmer for a while (the longer the better), add a splash of balsamic vinegar. Use a blender to liquidise the soup.
Serve with hot crusty bread, sprinkle soup with fresh basil and balsamic vinegar to taste.
