Minty Mushy Peas

Ingredients

2 medium sized potatoes, peeled and finely diced
1kg/2lb 3oz of frozen peas
a handful of fresh mint leaves
3 large knobs of butter
sea salt
freshly ground black pepper

Method

Boil the potatoes in salted boiling water until nearly tneder. Add your peas to the pan and then after 2 minutes of boiling add the mint. After another minutes, drain everything into a conander. Leave for 1 minute to steam, then put everything back into the pan and mash with a potato masher. You can do this in a food processor - just pulse until smooth. Whether mashing or pulsing, when it's done add your butter and season very carefully to taste.
