Oatmeal-Apricot Cookies

Ingredients

1 ¼ cups old fashioned rolled oats
3/4 cup flour
½ teaspoon baking powder
1/2 teaspoon salt
8 tablespoons unsalted butter (room temp)
½ cup packed light brown sugar
¼ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
¾ cup coarsely chopped dried apricots
¾ cup slivered almonds

Method

Preheat oven to 350. In a medium bowl, whisk oats, flour, baking powder, and salt to combine. With an electric mixer, beat butter and both sugars on medium speed until light and fluffy. Beat in egg and vanilla. With mixer on low speed, add oat mixture, and mix just until combined. Fold in apricots and almonds. Divide dough into 12 pieces and roll into balls. Place balls on baking sheets 3-4 inches apart. Using your fingers flatten balls to about ¾ inch thickness. Bake, rotating sheets halfway through, until edges begin to brown, 25-30 mins. Cook 5 minutes on baking sheets then transfer to wire rack to cool completely.
