Mango Sorbet

Ingredients

1 Cup caster suger
2 Tbsp lemon juice
2 Cups mango puree, or 3 fresh mangos pureed

Method

Combine the sugar and 1 1/4 cup of water in a saucepan and stir over low heat to disolve the sugar. Bring to a boil for 2 minutes without stirring. Set aside to cool to room temperature.

Add the lemon juice to the mago puree and slowly pour on the sugar mixture. Mix well. Pour into a shallow metal tray and cover with plastic wrap. Freeze for 4 - 6 hours.

Break up the mixture with a fork and wprk through food processor until soft and smooth. Spoon into an airtight container and freeze for another 4 - 6 hours or until firm.
