Mexican Lasagne

Basically a yummy burrito in a baking dish

Serves: 12


1 lb. ( ½ kg) ground beef
1 packet of taco seasoning
2 – 16oz (500ml) can of refried beans
1- jar of salsa
16 small corn tortillas (you can use flour)
4 c. of cheddar cheese
1 – 12oz can of corn
2 green onions, chopped
2 tomatoes chopped

Sour cream, guacamole, salsa to garnish


1.Preheat oven to 375/190
2.In a large skillet cook ground beef, drain.
3.Combine with taco seasoning and refried beans.
4.Spread salsa on the bottom of the pan.
5.Add a layer of corn tortillas
6.Spread ½ of bean and meat mixture on top
7.Add a layer of cheese
8.Add a layer of corn tortillas
9.Spread a thin layer of cheese
10.Add another layer of corn tortillas
11.Add the rest of the bean and meat mixture
12.Add the remaining cheese
13.Add a remaining layer of tortillas
14.Cover with a thin layer of salsa and/or cheese
15.Cover loosely with tin foil
16.Cook until cheese is bubbly and warm in the middle-- about 30 minutes
17.Top with green onions and tomatoes.
18.Serve with sour cream and guacamole
