Easiest Meringues

These take five minutes to make, and are lovely and chewy - perfect for pavlova

4 egg whites
250g caster sugar


Preheat oven to 120C. Beat egg whites with hand beater or electric mixer until firm, then add caster sugar one tablespoon at a time while you beat the mixture until it is stiff and glossy. Grease and line a baking tray and place spoonfuls of the mixture on to make the desired size of meringue you want. I often double the recipe to make meringue baskets for mini-pavlovas for a crowd (15-20). This recipe will make enough meringue baskets for eight. Otherwise you can make one big pavlova shell with the mixture. Bake for 1 - 1.5 hrs, depending on the size of the meringues; then open the oven to let it cool a little and leave the meringues in overnight if possible.
