1 tabsp vegetable oil
3cm/1.25" ginger, finely grated
400g/14oz aspargus, trimmed
2 garlic cloves, crushed
1 red chilli, finely chopped
375g large peeled cooked prawns (shrimp)
1 tbsp sesame oil
1 tbsp toasted sesame seeds
juice of one lime + lime wedges to serve
Heat the vegetable oil in a large wok or pan, add the ginger and asparagus (I usually steam the asparagus for 2-3mins first) and cook for 1 minute, constantly tossing.
Add the garlic, chilli and prawns, mix well and cook for a further 5 mins, still tossing in the pan.
Add the sesame oil, seeds and lime juice, mix and serve immediately. Garnish with the lime wedges. Serve with rice or noodles if you wish.
