Moscow Mule Vodka Jelly

Ingredients

800ml ginger beer - shop-bought or home-made
Juice of 3 lemons
100ml vodka
2 sachets of gelatine (or Vege-Gel)

Method

(Depending on your gelatine you may need to alter the method slightly - see how the instructions on the packet compare)

Juice the lemons, straining the pips and bits out and mix the juice into the ginger beer. 'Sponge' the gelatine in eight tablespoons of the ginger beer mixture - 'sponge' means sprinkle the gelatine on top of the liquid until it's absorbed fully. Melt the sponged gelatine over some simmering water. Mix the vodka into the ginger beer mixture, then mix the ginger beer mixture into the gelatine (always pur the ginger beer onto the gelatine, not the other way round). Pour into glasses or a big glass bowl and allow to set.

Fabulous when served with a good vanilla ice cream, topped with a sprig of mint.
