Yorkshire Pudding

1 cup sifted flour
1/2 tsp salt
1 cup milk
3 eggs
fat drippings from roast

1. sift flour and salt
2. Add milk, stirring to prevent lumps
3.Add eggs and beat for 2 minutes
4. Let stand for 20 minutes
5.Heat oven to 475 degrees Farenheit

6. Place 1 tablespoon of fat dripping into each cup of muffin pan. Place pan in oven until the fat bubbles
7. Pour in batter to a depth of 1/2 to 3/4 inch
8. Place pan in oven, reduce heat to 375 degrees Farenheit
9. Serve when done

Note: Can be baked in an 8 inch square pan. Pour 1/2 cup drippings in bottom of pan and proceed as above, but bake for 50 minutes.
