Roasted Broccoli Salad

large head of broccoli, chopped
1 tablespoons olive oil
2 teaspoon balsamic vinegar
1 clove garlic, minced finely
salt & pepper to taste
feta cheese (optional)


Preheat oven to 400 degrees Fahrenheit. In large bowl, toss broccoli with 1/2 tablespoon of the olive oil and the salt and pepper. Spread on baking sheet and roast 15 minutes or until broccoli is tender and lightly browned, stirring halfway through. Meanwhile, combine remaining olive oil, balsamic vinegar, and garlic. Place broccoli in serving bowl and let cool slightly. Pour dressing over, add feta, and toss just before serving.
