Greens w/ Sweet Potatoes & Black Beans

Ingredients

2 sweet potatoes, cooked
2/3 can of black beans
a good double handful of mustard greens, stems removed
1/2 an onion
1-2 cloves of garlic
couple slices of lean ham or bacon, cooked
chicken broth to taste
seasonings to taste (salt, pepper, cayenne pepper, thyme)
splash of lemon juice

Method

Cook the ham or bacon in olive oil and set aside. Cook chopped onions and garlic until soft, then add cubed sweet potatoes. Add a little chicken broth, the greens and black beans, season, and stir gently while cooking (try to keep the sweet potatoes from breaking down). Add more chicken broth as needed to help steam/boil the greens a little. Cook until the greens are wilted, maybe 5 minutes. Sprinkle ham/bacon on top. Serve with a squirt of lemon juice.
