Lemon Blossoms

Ingredients

1 pkg. yellow cake mix
1 pkg. lemon pudding mix (3.5 oz)
4 eggs
3/4 c. oil

Glaze:
1 lb. box powdered sugar, sifted
zest from one lemon
3 Tbsp. each, water and oil
1/3-1/2 c. fresh lemon juice

Method

Pre-heat oven to 350.
Beat "blossom" ingregients in large bowl with mixer on low speed for 2-3 min. Increase speed to medium and beat 2 more min. Spray mini-muffin pan with non-stick spray, and fill 1/2 full. Bake 12 min.

Whisk all gaze ingredients thouroughly.

Allow "blossoms" to cool. Stick a fork into the bottom of the "blossoms" and dunk in the glaze. Allow glaze to dry. (Dunk as many times as you like).
