chorizo sausage, sliced and chopped into small pieces
red onion, chopped
All of the amounts depend on how much you want to make- it's an incredibly forgiving recipe and you can play with balance easily.
Saute onion and garlic in olive oil until the onion is soft and translucent. Throw in a bit of sugar. Add the chorizo and let it cook up together until the entire thing is warm and the flavours have melded together somewhat. (They will drift more if you make it a day in advance.) Serve on crackers or bread, and use the bread to soak up the lovely flavoured oil that will be left.
