Italian Meatloaf with Spinach

2 tsp oil
1 each onion and red bell pepper, chopped
2 tsp minced garlic
1 1/2 pounds ground beef
1 cup bread crumbs
2 eggs
3/4 tsp each salt and pepper
10 oz box frozen chopped spinach, squeezed dry
1 cup shredded mozarella cheese
4 oz sliced salami


Heat oil in skillet. Add onion, bell pepper and garlic, saute until lightly browned and soft. Transfer to a bowl, set aside. HEAT OVEN TO 350°. Coat a loaf pan with nonstick spray. Add beef, bread crumbs eggs, salt and pepper to bowl. Mix. Place on a sheet of plastic wrap and press into a rectangle. Top with a layer of spinach, then cheese, then salami. Roll up from short end, lift into loaf pan. Bake 1 hour 10 min. or until cooked through. Let stand 10 min. before unmolding on platter. Slice. SERVE WITH BOTTLED MARINARA SAUCE.*
