Dietary guidance: v
50g/2 oz butter
225g/8oz mushrooms, finely chopped
600ml/1 pint vegetable stock
450ml/3/4 pint of milk
Melt the fact in a saucepan. Add the mushrooms and fry, stirring for 5 minutes. Add the flour and stir in well. Cook for further 2 minutes. Gradually stir in the stock and milk and bring to the boil, stirring until thickened. Add salt and pepper to taste.
