Dietary guidance: v
1 container large bocconcini cheese balls
3 roma tomatoes, sliced thinly
1 tbsp. pesto sauce
1/2 cup italian dressing
A good handful of mesculin lettuce mix
salt and pepper to taste
Drain bocconcini balls, slice each ball into 1/4 inch slices. Mix pesto sauce and italian dressing together, set aside.
On an individual plate for each person, arrange bocconcini and tomatoes (ie: cheese, tomato, cheese tomato) all the way around in a circle, leaving the middle empty.
After you've arranged the cheese/tomatoes, put some of the lettuce mix into a mound in the centre. Drizzle pesto/dressing over the tomatoes/cheese in a circle, then a little over lettuce. Sprinkle some salt, ground fresh pepper over top, and serve.
