Guiness Stew

Ingredients

25g/1 oz lard or something more healthy
2 onions, sliced
2 garlic cloves, crushed
1/2 green pepper, cored, seeded and chopped
450g/1 lb stewing steak, cubed
100g/4oz mushrooms, sliced
300ml/1/2 pint canned Guinness
1 teaspoon dried rosemary
1 teaspoon chopped parsley
1 teaspoon garam masala
salt
pepper

Method

Melt the lard or alternative in an oven proof casserole. Add the onions, garlic and green pepper and fry until softened. Add the steak cubes and brown on all sides. Stir in the remaining ingredients and bring to the boil. Cover the casserole and transfer to a preheated moderate oven 180C/350F/Gas mark 4 and cook for 1 1/2 hours or until the meat is tender.
