Wild rice with mushrooms and shrimp

Get your fiber and protein in the tastiest way possible. This dish is really filling because of the wild rice, so it can stand as a light lunch on it's own. Excellent side for meats (especially steak and salmon because of the stronger flavors)

Preparation time: 10 min
Cooking time: 30 min

Serves: 7


2 c uncooked wild rice (cooked separately)
2 ¼ c shrimp (on the little side)
1 c fresh mushrooms, sliced
2 cloves garlic, minced
1 med onion, chopped
½ c butter or olive oil


Cook rice. Sauté garlic, onion and mushrooms in oil. Combine and add to rice. Ad other ¼ c oil and bake for 30 min at 350 degrees.
