3 c. (1/2 lb.) fresh chanterelle mushrooms
1 1/2 Tbsp. butter
1 Tbsp. finely minced green onions
1/4 tsp. ground black pepper
1/4 tsp. salt
1 Tbsp. chopped fresh chives
Using a soft brush, gently remove any dirt from the mushrooms without washing.
In a skillet, melt the butter over medium heat; add green onion and cook for 1 min. Add the mushrooms and sauté until lightly browned but still firm, ~3/5 mins. Stir in salt and pepper to taste. Transfer salad to a serving bowl and sprinkle with chives.
